Shortbread cookies have to be one of my favorites, especially around the holidays! They may not be the prettiest cookie, but I’d take shortbread over a pretty decorated cookie any day! They’re buttery with a tender crumb that almost melts in your mouth!
They’re best made with real butter, the best quality you can find, but I’ve also made them using dairy-free butter with good results. They do, however, spread a little more than the ones with regular butter do.
