Chocolate & Raspberry Chia Pudding Parfaits

These chocolate and raspberry chia pudding parfaits are delicious, free of refined sugar, and even gluten, dairy, and grain free as well. They are also customizable to suit your taste. Add more or less sweetener to your liking.

We put them in our oatmeal, smoothies, popsicles, and gel them in chia pudding! Here are a couple of variations to make your chia pudding extra indulgent, yet still healthy!

Chocolate & Raspberry Chia Pudding Parfaits | Grain, Gluten, Dairy, & Refined Sugar FreeOur favorite way to enjoy chia pudding is by making a parfait with layers of pudding with fresh fruit, nuts, and seeds. One of the layers is made rich and decadent with the addition of dark cocoa and vanilla. It a healthier chocolate pudding and is a wonderful complement to the raspberry pudding, which is made with fresh raspberries. This parfait makes a hearty snack, an on-the-go breakfast, or even a delicious dessert!

Chocolate & Raspberry Chia Pudding Parfaits

Description

This chocolate and raspberry chia seed parfait is full of fiber, omega-3 fatty acids, and nutritious vitamins and minerals. Makes a great breakfast on-the-go, healthy snack, or would even suffice as a delicious dessert!


Ingredients

Scale

CHOCOLATE CHIA PUDDING:

  • 1/4 cup Chia Seeds
  • 1–2 tablespoons cocoa powder (I use 2 tbsp of Dutch Cocoa for an intense chocolate flavor)
  • 1/2 teaspoon Vanilla, optional
  • 1–2 tablespoons Maple Syrup or Coconut Sugar, more or less to taste
  • 1 cup almond milk or other milk of choice (homemade almond milk recipe HERE)

RASPBERRY CHIA PUDDING:

  • 1 cup raspberries, fresh or thawed from frozen (or other berry of choice)
  • 1/4 cup Chia Seeds
  • 1/2 teaspoon Vanilla, optional
  • 2 tablespoons Maple Syrup or Coconut Sugar
  • 1 cup almond milk or other milk of choice (homemade almond milk recipe HERE)

TOPPINGS:

  • Fresh Fruit: berries, sliced bananas, or kiwi to top
  • Nuts and Seeds: hemp seeds, cacao nibs, unsweetened coconut, almonds, hazelnuts, etc.

Instructions

TO MAKE CHOCOLATE PUDDING:

  1. In a medium jar or container, mix together chia seeds and cocoa powder. Stir in vanilla, maple syrup and then almond milk until well combined. Cover with lid and store in the refrigerator for 2 hours to overnight. (If you can remember, it helps to stir about 15-30 minutes after it has been soaking to break up any chia clumps)

TO MAKE RASPBERRY CHIA PUDDING:

  1. In a medium jar or container, mash together raspberries and chia seeds until the berries are broken down and there aren’t any big chunks remaining. Stir in vanilla, maple syrup, and milk until well combined. Cover container with a lid and place in the refrigerator to thicken for 1 hour to overnight.(If you can remember, it helps to stir about 15-30 minutes after it has been soaking to break up any chia clumps)

PUTTING IT TOGETHER:

  1. After chia seeds have gelled and mixture is thick, like pudding, stir with a whisk to break up any chia clumps. Layer puddings in a dish or jar, one on top of the other or you can alternate layers. Sprinkle fresh fruit, nuts, and seeds in between layers or on top of the pudding. Serve chilled. Makes two 1 cup servings.

    I love that this has different layers and different pudding flavors! I have some avocado chocolate pudding in the fridge right now, I’m going to whip up that raspberry chia pudding and serve these for dessert tonight! The kiwi slices make it look so colorful and tropical– love the presentation, absolutely beautiful!
