Maple Roasted Peaches

These simple roasted peaches have only four ingredients and can be served with ice cream, oatmeal, yogurt, pancakes, etc. Free of gluten, grains, dairy, eggs, and refined sugar! 


There are times when I hesitate to post a recipe. Especially those that are just crazy simple. I often wonder if people will take offense that I would have dared to think they didn’t already know how to make it! But, then I see people are still posting recipes for avocado toast, and I figure if they want to know how to put avocado on top of toast, then maybe, just maybe, they’ll care to know how to make these easy roasted peaches! 


As simple as roasting peaches may sound, it makes them incredibly flavorful…just when you think a fresh, juicy peach couldn’t get anymore delicious! My favorite part is the caramelized maple syrup bits. Sometimes I run it under the broiler for the last couple of minutes, to get it extra caramelized, but that’s totally optional. Just be careful, it can go from perfection to burnt in a matter of seconds under the broiler…and yes, I speak from experience! 


I didn’t include anything in the recipe to serve along with these, because there are so many delicious options. Think ice cream, pancakes, waffles, oatmeal, or yogurt!

After roasting, the peaches taste like the inside of a peach pie. They’re super yummy and very versatile too! Use frozen if you don’t have access to fresh, or feel free to use another stone fruit, like plums or nectarines, instead. So many possibilities! Enjoy!

Description

Roasting fruit brings out their natural juices and sweetness. This simple version has only four ingredients and can be served with ice cream, oatmeal, yogurt, pancakes, etc. The possibilities are endless!


Ingredients

Scale
  • 3–4 large peaches, pitted and sliced (can also use another stone fruit, like nectarines, apricots, plums, or cherries.
  • 2–3 tablespoons avocado oil, melted coconut oil, or ghee
  • 2–3 tablespoons pure maple syrup (can also use brown sugar), use more or less to taste
  • few dashes cinnamon

Instructions

  1. Preheat the oven to 425ºF. Place sliced peaches on a baking sheet (I use parchment to keep them from sticking, but it’s not necessary). Drizzle peaches with coconut oil, maple syrup, and cinnamon. Toss to coat.
  2. Bake for 20–25 minutes, or until peaches are tender and sweetener has caramelized, flipping halfway through.
  3. Serve peaches on ice cream, pancakes, yogurt, or oatmeal! They’re also excellent by themselves with some {coconut} whipped cream!
