Gluten-Free Banana Bread:

3/4 cup (149g) coconut sugar or pure cane sugar

3 large bananas, mashed (Use ripe and spotted bananas. About 1 1/3 cups)

1/4 cup vegetable oil, melted coconut oil, or other oil of choice

1/4 cup unsweetened almond milk or other milk of choice

1 teaspoon apple cider vinegar

1 teaspoon vanilla extract, optional

1 cup (120g) gluten free all-purpose flour blend

1/2 cup (52g) finely ground almond flour

2/3 cup (55g) cocoa powder or cacao powder

1 teaspoon baking soda

1/2 teaspoon salt

Instructions

  1. Preheat oven to 325ºF. Lightly grease or line a 9x5x3 loaf pan with parchment paper and set aside.
  2. In a large bowl, mash bananas together with the sugar. Stir in oil, milk, vinegar, and vanilla.
  3. Add flour(s), cocoa powder, baking soda, and salt, mixing just until incorporated. Stir in 1/2 cup chocolate chips.
  4. Pour batter into prepared loaf pan and top with remaining 1/4 cup of chocolate chips.
  5. Place pan in the oven on the middle rack and bake for 60–70 minutes, until a toothpick inserted near the center comes out clean. Let loaf cool 10–15 minutes before removing from the pan. Remove and cool completely on a baking rack for easy slicing.
