Can you believe it’s October already? I can’t believe the year is almost over. Thanksgiving and Christmas are my favorite holidays, so I really want to enjoy these last few months of 2020. Although it doesn’t usually get cold down here in the south until later in the year, storm season has brought unseasonable cool weather out here these past few weeks.
So we’ve actually been getting to experience a “real” fall season, like the lucky northerners do! Minus the pretty colorful fall leaves though…they somehow didn’t get the memo that it’s fall yet! 😂
We’ve been making all the fall things lately, including these apple crumb muffins! Apple treats are my hubby’s fave, so I try to sprinkle some apple treats in between all the pumpkin things I make. 😆🧡🎃

Ingredients
Crumb Topping:
- 1/3 cup all-purpose flour
- 1/4 cup brown sugar, granulated sugar, or blonde coconut sugar
- 1/4 cup rolled oats (use gluten-free oats if needed)
- 1 teaspoon cinnamon
- 3 tablespoons solid coconut oil or room temperature butter
Apple Muffins: (gluten-free option below)
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar or blonde coconut sugar
- 1/2 cup rolled oats
- 2 teaspoons cinnamon
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2/3 cup milk of choice
- 1 teaspoon vinegar (distilled white or apple cider)
- 1/3 cup oil of choice
- 1 1/2 cups cored and finely chopped apple (about 1 large or 2 medium apples)
Gluten-Free Apple Muffins:
- 1 cup gluten-free measure for measure flour I used King Arthur Measure for Measure Gluten-Free Flour
- 1/2 cup almond flour
- 1/2 cup gluten-free rolled oats
- 3/4 cup granulated sugar or blonde coconut sugar
- 2 teaspoons cinnamon
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup milk of choice
- 1 teaspoon vinegar (distilled white or apple cider)
- 3 tablespoons oil of choice
- 1 1/2 cups cored and finely chopped apple (about 1 large or 2 medium apples)
Instructions
- Make crumb topping by combining flour, oats, sugar, and cinnamon in small bowl. Use a fork or your fingers to mix softened butter/oil into the flour mixture until crumbly. Set aside.
- Mix together the dry ingredients—flour, oats, sugar, cinnamon, baking powder, baking soda, and salt.
- In a small dish, mix together the milk and vinegar. Pour milk mixture and oil into the dry ingredients, stirring until combined. Fold in the chopped apples. Let batter rest for 10-15 minutes while oven preheats.
- Preheat the oven to 375°F. Line a 12-cup muffin pan with paper liners or grease well. Scoop batter into each liner filling 3/4 full, then sprinkle streusel mixture on top. Makes 10-12 muffins, depending on how much you fill each liner.
- Bake the Bake for 20-25 minutes, or until tops have domed and a toothpick inserted near the center of a muffin comes out clean.
- Remove from the oven and let muffins cool for a few minutes before taking out of the pan to cool completely.
