Chocolate Zucchini Pancakes

These chocolate pancakes are free of gluten, eggs, dairy, & refined sugar! They’re full of wholesome ingredients, including zucchini, but you can’t even taste it!

Chocolate Zucchini Pancakes | Made with wholesome ingredients. Gluten, dairy, egg and refined sugar free. Leave it to me to find a way to eat chocolate for breakfast. And since pancakes are basically my favorite food group, (as you can tell by the ridiculous amount of pancake recipes on the blog 🙈) I just had to make a chocolate version. This is for you, my fellow chocolate lovers—chocolate zucchini pancakes with chocolate maple syrup…yes, chocolate topped with more chocolate! You’re welcome! 😉

Don’t worry, I added a whole shredded zucchini to these chocolate oat pancakes, so the vegetable automatically cancels out any unhealthiness that may be found in these…isn’t that, like, a rule or something?! The good news is, these pancakes are made with wholesome ingredients, like oat flour, coconut oil, flaxseed, and sweetened with maple syrup, so the added zucchini ends up being a bonus!

Ingredients

Scale

PANCAKES:

  • 1 cup *oat flour
  • 1/2 cup gf all purpose or regular all purpose flour I used King Arthur Gluten Free Multipurpose Flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon of salt
  • 2 tablespoons flaxseed meal
  • 1/4 cup unsweetened cocoa powder
  • 1 cup shredded zucchini, about 1 whole small zucchini
  • 1 cup almond milk, a little more may be needed
  • 1/4 cup Maple Syrup
  • 2 tablespoon coconut oil, plus extra for pan
  • 1 teaspoon vanilla extract

CHOCOLATE SAUCE: (optional)

  • 1 tablespoon regular/dairy-free butter, melted
  • 1/2 cup Maple Syrup
  • 6–7 tablespoons Unsweetened Cocoa Powder
  • splash of vanilla extract, optional
  • Fresh sliced fruit such as strawberries, raspberries, or bananas (optional)

Instructions

PANCAKES:

  1. *You can easily make your own oat flour by grinding whole oats (I use my coffee grinder, but a food processor works!)
  2. In a large bowl, combine dry ingredients—flours, baking powder, baking soda, salt, flaxseed, cocoa powder, mixing well. Stir in shredded zucchini, almond milk, maple syrup, oil, and vanilla extract, mixing together just until incorporated. Let rest for a few minutes to allow the oat flour and flaxseed meal to soak up the liquid and bind the mixture together.
  3. Grease a pan or griddle with extra coconut oil and place on the stove over medium heat. Pour batter onto the hot pan by 1/4 cupfuls. Flip when edges have set and cook thoroughly. If batter gets too thick, stir in a splash of milk.

CHOCOLATE SAUCE:

  1. In a small bowl, combine together the melted butter, maple syrup, cocoa powder, and vanilla. Add extra cocoa powder to make it thicker or add more maple syrup to thin. You can heat for 15-20 seconds in the microwave if you’d like it warm.

Sweet or Savory Waffles

These delicious sweet or savory waffles can be topped with fresh fruit & maple syrup or with eggs, veggies, and hollandaise sauce!

Since we are all home most days of the week now (my hubby just began working from home part-time) we eat a hearty breakfast almost every morning, even more so now that it’s summer and the kids are out of school. Some weekdays feel like the weekend and I can’t get enough.

Sweet or Savory Waffles | Free of gluten, dairy, and refined sugar.I am a big fan of bread, whatever the shape or form, so of course pancakes and waffles are usually my choice for breakfast. My kids and I enjoy sweet breakfasts, while my husband enjoys more savory flavors. The nice thing about these waffles is that you can make them either sweet or savory depending on what you top them with. After all, waffles are a form of bread so it’s kind of like you’re eating toast or a bagel, right?!

My favorite toppings for pancakes or waffles is fresh fruit. My son loves peaches so we topped his with some whipped coconut cream, sliced peaches, and added a little crunch with toasted almonds and chia seeds. Oatmeal is a common breakfast around here, both for its taste and convenience. Growing up, my mom would make me oatmeal and toast most mornings before school. I always ate plain oatmeal with a little milk and a spoonful of sugar. Never in my wildest dreams would I have ever thought to put “stuff” inside oatmeal. That’s not how we did it back in the 80’s. Not in my house anyway. 

Besides adding chia to the oats, which gives a wonderful texture plus added fiber and omega-3 fatty acids, we love to to top our oatmeal with all kinds of deliciousness.

Sweet Potato Waffles

Sweet potato waffles and other wholesome ingredients topped with cinnamon butter, candied walnuts, and a drizzle of maple syrup! So delicious!

The thing about these sweet potato waffles with cinnamon honey butter and toasted pecans is that technically it could easily suffice for dinner too. I mean, besides the fact that I’d happily eat these for any meal of the day, and will nine times out of ten choose sweet to savory, I do in fact eat sweet potatoes for dinner often. My favorite way to them is very similar to this: with a pat of butter, a sprinkle of cinnamon, and a touch of maple syrup. It’s seriously yum..you should definitely try it sometime 🙂

…so, have I convinced you to start making waffles for dinner yet?!

Sweet Potato Waffles with Maple Candied Walnuts & Honey Cinnamon Butter | Gluten, dairy, egg, and refined sugar freeI’m usually a pancake kind of girl, which is really only because I don’t like the fact that waffles can only be made one at a time. I’m not the most patient of people and even though I’m pretty used to eating cold food (food photographer probs,) waffles are one of those foods that are best eaten hot, especially if you prefer crispy to soggy.

The wire rack allows the air to circulate so the steam they give off doesn’t make them soggy. Resist the temptation to stack hot waffles as this will ensure lots of moisture, which equals limp and soggy waffles. *sad face* 🙁

That is, unless that’s the way you like them, then *happy face* 🙂 (I won’t judge.)

Description

Wholesome sweet potato waffles topped with maple candied walnuts and honey cinnamon butter! Gluten and dairy free option included.


Ingredients

Scale
  • 2 cups gluten-free or regular all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • pinch of nutmeg
  • 1.5 – 2 cups almond milk or other milk of choice (More may be needed. Start with less and add more, if necessary)
  • 3/4 cup sweet potato puree (from 1 baked sweet potato; can also use pumpkin puree.)
  • 1/4 cup olive oil or melted coconut oil, plus more for waffle iron
  • 2–4 tablespoons maple syrup, to taste
  • 2 tablespoons ground flaxseed
  • 1 tablespoon apple cider vinegar
  • Honey Cinnamon Butter (recipe below)
  • Maple Candied Nuts (recipe below)

Honey Cinnamon Butter:

  • 1 stick unsalted butter, softened (8 tablespoons. Dairy free can be used)
  • 2–3 tablespoons honey or maple syrup (vegan option), to taste
  • 1/2 – 1 teaspoon cinnamon, to taste
  • pinch of salt (if using salted butter, omit)

Maple Candied Nuts:

  • ½ cup raw walnuts or pecans (whole or chopped)
  • 1–2 tablespoons maple syrup, enough to coat the nuts
  • pinch of salt

Instructions

  1. In a large bowl, combine dry ingredients: flour, starches, baking powder, salt, cinnamon and nutmeg. Set aside. In a medium bowl, mix together milk (start with lesser amount and add more as needed) sweet potato, oil, maple syrup, flaxseed meal, and vinegar until well combined. Pour wet mixture into the dry mixture and stir just until combined. Let sit while waffle iron heats up. The amount of milk needed will depend on the flour used. Use the lesser amount and add more as needed. The longer the batter sits, the thicker it gets, so just mix in a splash more milk if it starts to get too thick to ladle and spread into the waffle iron.
  2. Use a pastry brush to liberally grease the top and bottom irons of your waffle iron. When it’s hot, pour batter by the 1/3 – 1/2 cupfuls onto the greased iron. Cook until golden brown. The amount of waffles made will vary depending on your iron. Yields about 8 larger waffles or 10-12 smaller waffles, about 4-5 servings. Serve hot. Can freeze leftovers in a freezer safe baggie and toast or bake to reheat.
  3. To make the honey cinnamon butter: combine the butter, honey, cinnamon, and pinch of salt in a mixing bowl. Use the whisk attachment or hand held mixer and beat on medium speed until fluffy.
  4. To toast pecans, place a handful of pecans into a small, dry pan. Heat over medium-low heat, stirring constantly, for several minutes, or until nuts began to brown and become fragrant. Can burn easily, so keep a close eye on them.
  5. To make the candied nuts: Stir pecans and maple syrup together in a small saucepan over medium heat until syrup begins to thicken and coat the pecans, 2-4 minutes. Syrup will continue to firm when cool, so remove from the heat just as soon as it begins to coat the nuts.

Breakfast Fried Rice

Breakfast Fried Rice | A delicious gluten-free breakfast dish! Any protein of your choice can be added as well!
Growing up in Hawaii, it was very typical to eat rice with just about every meal. For breakfast we may have fried smoked sausage, scrambled eggs, and rice, or an omelet with rice. There was even spam musubi, which is a block of rice topped with a slice of fried spam, and wrapped with seaweed (like sushi!) Spam is really big in Hawaii. I know that probably sounds a bit gross and very unhealthy to you.. Just do me a favor, next time you find yourself in Hawaii, try it and let me know what you think! It’s a must-try local food!

Anyway, back to the recipe. Some mornings, my dad would cook up a big batch of fried rice with bacon or any leftover meat we had in the fridge. He never followed recipes, he just cooked by taste. Even thought it would be different each time, it always tasted amazing! It’s truly a comfort food for me. It reminds me of my childhood:) Do you have any dishes that bring back childhood memories?

Making fried rice is a lot like making a salad. You just need the basic ingredients and then can customize it by adding whatever else you have on hand.

This is my basic fried rice. I usually don’t measure (I cook a lot by taste) so some of the ingredients have a range where you can adjust it according to your preference. You can add extra veggies or a protein too, whether it be tofu, chicken, or shrimp. One of my favorites is Bacon Fried Rice. I included the recipe below!

I begin by sautéing the onions and garlic in some butter to bring out their flavor. You can use butter/ghee, refined coconut oil, or any oil of your choice. I say refined because it doesn’t have the coconut flavor, plus it can withstand a higher temperature than extra virgin coconut oil. However, if you just love that coconut flavor, feel free to use extra virgin coconut oil.

After the onions and garlic have softened, mix in the rice and break up any large clumps. Add peas and thoroughly combine with the rice and onions.

Push the rice off to one side of the pan and add the beaten eggs to the open skillet. Stir the eggs and cook until fluffy. Mix the egg in with the rice mixture. 

Pour in the soy sauce, sesame oil, and season with pepper. Add salt only if needed. Soy sauce tends to have lots of sodium.

Top with a fried egg, chopped green onion, and serve. You can also drizzle a little sriracha sauce on top, if you like it spicy! Enjoy, friends!

Fried rice makes a delicious and hearty, gluten-free breakfast. It’s also a great option when wanting to change up the menu a bit. Bacon Fried Rice variation below.


Ingredients

Fried Rice:

  • 3 tablespoons grass-fed butter/ghee or refined coconut oil
  • 1 cup chopped onion
  • 2–3 garlic cloves, minced
  • 6 cups day-old cooked brown or white rice
  • 1 cup frozen peas
  • 3 eggs, beaten
  • 5–6 tablespoons gluten-free soy sauce or tamari, to taste
  • 1–2 tablespoons sesame oil, to taste
  • 1/4–1/2 teaspoons pepper, to taste
  • salt, as needed
  • chopped green onion
  • 8–12 oz. uncured bacon or turkey bacon, optional

Fried Eggs:

  • refined coconut oil or butter/ghee
  • whole eggs, 1 per person
  • salt
  • pepper

Instructions

Fried Rice

  1. In a large pan or wok, sauté chopped onion in butter over medium heat for 2-3 minutes. Add minced garlic and continue to cook for 2-3 more minutes, or until onion is soft and translucent. Stir in rice and break up large chunks. Add frozen peas and stir until well incorporated. Push rice to one side of the pan and add beaten eggs. Scramble eggs, stirring often and cook until fluffy. Mix eggs in with the rice. Pour soy sauce and sesame oil evenly over the rice and mix together. Turn heat up to medium-high and fry rice until any remaining liquid has evaporated and rice is hot and steamy. Season with pepper and add salt, if needed. Remove from heat.

Fried Eggs

  1. Heat a small pan over medium heat. When hot, add oil/butter and move pan around to evenly coat the bottom. Crack a whole egg into the hot pan and reduce heat to medium-low. Season with salt and pepper. You can partially cover the pan with a lid if you like the top of the egg cooked too. Cook for a few minutes, until the yolk is done to your liking. Remove the egg to a plate and repeat the process for the remaining eggs.
  2. Distribute fried rice into bowls and top with fried egg and chopped green onion. Serves 3-4

Bacon Fried Rice

  1. In a large pan, cook your bacon according to package directions. Remove bacon and drain grease, reserving 1-2 tablespoons. Cook onion in bacon grease over medium heat for 2-3 minutes. Add minced garlic and continue to cook for 2-3 more minutes, or until onion is soft and translucent. Stir in rice and break up large chunks. Add frozen peas and stir until well incorporated. Push rice to one side of the pan and add beaten eggs. Scramble eggs, stirring often and cook until fluffy. Mix eggs in with the rice. Pour soy sauce and sesame oil evenly over the rice and mix together. Turn heat up to medium-high and fry rice until any remaining liquid has evaporated and rice is hot and steamy. Chop or crumble bacon and mix into the rice. I add about 2-3 pieces per person/serving. Season with pepper and add salt, if needed. Remove from heat and distribute into bowls. Top with fried egg and chopped green onion. Serves 3-4.

Coconut French Toast Parfaits

Considering the amount of breakfast recipes I’ve added to this blog, I think we can safely say I’m a breakfastaholic that I’m a big breakfast fan! There’s no wonder then that the first recipe I would come up with for Valentine’s Day would be for some breakfast item. 

But, in my own defense, these are not your average pieces of eggy bread. I mean, wouldn’t you love to wake up on Valentine’s Day and be served this breakfast in bed? I have made these French toast parfaits before and they were a big hit with my family. They’re my taste testers, food critics, recipe analysts..whatever you call them, they are extremely picky and brutally honest, two features which are essential to judge food properly:)

Then again, how could you go wrong with layers of:

coconut infused French toast chunks
velvety coconut whipped cream
sweet, juicy strawberry slices
lightly toasted coconut shavings

This makes the perfect breakfast to serve your loved ones on a special occasion, like Valentine’s Day, Mother’s Day, or just because. Do we really need a special reason to eat a yummy breakfast? I think not. Don’t think that this is too difficult to make either. It’s pretty much the same as making regular French toast, except you layer the ingredients in a pretty dish instead of piling it on a plate. See, it’s not difficult at all. In fact, this may actually save you space in your dish washer, essentially making it easier than regular French toast;)…
