When I was younger, I was a cereal addict. Forget bacon and eggs or other fancy schmancy breakfasts, just gimme all the cocoa krispies & capt crunchies, mmk? Please and thank you.
But as any serious cereal connoisseur knows, it’s not just a breakfast food. It’s the snack you eat when you get home from school and meal of choice for those fend-for-yourself dinners. Did y’all have those too? When mom didn’t want to cook and brought out all the old food leftovers from the fridge, only you didn’t want to eat old chicken and rice or mushy pasta so you’d just eat a bowl of cereal, because it’s your favorite, and then your mom would get mad at you since you chose to eat “new food” instead of helping to get rid of the old stuff from the fridge??
No? Just my family?? 😳 *awkward silence*
Well, now that I’m an adult, it’s the “I’m still up at 1am and starving” meal of choice. And since I’m an adult, I can eat all the cereal I want for any meal of the day {that I want!}
Isn’t being an adult great?!
But, now that I’m an adult with children of my own, I don’t even buy that sugary cereal anymore. It’s like your tastebuds change when you get older and you start to eat kale salads & granola, and you actually LIKE it! I love making homemade granola because I don’t add all that unnecessary sugar and those weird ingredients that the store-bought granolas have, and it tastes much better too!
Plus you can easily customize homemade granola to include your favorite nuts, seeds, or grains, and can even add dried fruit if you’d like.
This granola hardly lasts a full day in our house, especially those nights that my hubby and I stay up late after the kids go to bed to binge watch our favorite shows on Netflix. I mean, who needs popcorn when you have cereal, amiright?

5-Minute Skillet Granola
- Total Time: 5 mins
- Yield: 3 cups 1x
Description
This delicious and easy granola takes just a few minutes to toast in a skillet before it’s ready to eat! Use it to top yogurt & smoothies or as granola cereal. Feel free to customize the ingredients to suit your taste.
Ingredients
- 2 tablespoons coconut oil
or other oil of choice
- 4 tablespoons pure maple syrup
or honey
- 2 cups rolled oats
- 1/2 cup sliced almonds
, pecans, or other nut of choice
- 1/2 cup coconut flakes
, or extra nuts
- 1 tablespoon flaxseed
- 1/2 – 1 teaspoon cinnamon
, to taste
- pinch of salt
Instructions
- Place a large skillet/pan on the stove over medium-high heat and add coconut oil and maple syrup. Cook oil and syrup together until bubbly, 30–60 seconds. Stir in the remaining ingredients—oats, almonds, coconut, flaxseed, cinnamon, and salt.
- Continue moving oat mixture around with a wooden spoon or spatula until the oats and nuts start to turn golden brown and smell fragrant, about 3–4 minutes. If your mixture is browning too fast, turn the heat down a bit. Remove the pan from the heat and let granola cool completely before storing in an airtight container. If you like dried fruit, like cranberries or raisins, you can stir 1/2 cup or so into the granola as soon as you take it off the stove.
- Push granola to a pile in the center of the pan if you want it to dry in clumps for granola clusters. It will also become crunchy as it cools.
- When it’s cool, break up large clumps and store in an airtight container. Makes about 3 cups of granola.

I’ve made this recipe 2-3 times now and have enjoyed it every time! The most recent batch has used seeds (pumpkin and sunflower) in place of nuts and coconut due to allergy restrictions at school and it’s still tasty.
For anyone wondering, I have added fruit every time and ALWAYS forget to save it for the end. Currants and cranberries have been mixed in with the oats and nuts and toasted on the stove, they turned out fine both times. I’d still recommend to follow the recipe and add the fruit at the end to make things less stressful

omg ok so i woke up after a nap at 5pm today feeling super out of this world & i was hungry & i googled something w/ granola and then my sleepy ass went & made this even though i didnt have time to eat it or anything and didnt have like half of the ingredients (only oats, coconut oil, agave syrup & some cookie spices) yet i made it anyway and then i had to run off to a meeting BUT THEN i came back home at 11pm hungry af & i recalled you mentioning you use this as a midnight snack so i was like HELL YEAH imma try this granola thing i made and let me tell you, it was goooooooooood. like, suprisingly so. im shook. im a mess in the kitchen. so thank you for the recipe! much love, a tired college student living on the other side of the planet, kinda. idk i know you wrote this a long time ago but i just realized how cool it was that you thought of something to write and a recipe to share and then a few years later in the Netherlands some random person is really enjoying your tips. i appreciate this!
I am always looking for shortcuts because I am impatient. I look at recipes just to get an idea what people are using and always make it my own. I use what I have on hand and don’t normally measure. I also used a short list of ingredients to make it easy and fast. I melted some ghee and dumped in some rolled oats,chopped peanuts and almonds, a little bit of erithytol, few dashes of almond extract and instead of honey or maple syrup I always use sugar free pancake syrup along with a pinch of salt. It only took a few minutes to get everything golden and toasty. I clumped it together to let it cool into clusters. I ate it in unsweetened almond milk with blueberries and strawberries. Yum!
Can you use agave syrup instead of Maple syrup?
