Hi there! Welcome to my online recipe box…a place where I share healthy recipes and practice my food photography! My name is Joscelyn and I am a wife, homeschool mom of two, and food-lover. I was born and raised in Honolulu, Hawaii, but moved to North Carolina in my teens. There, I went to college and received a fine arts degree in graphic design (which I have used mostly to take pictures of food!) A few years ago, my family and I moved halfway across the country to Tulsa, Oklahoma, where my husband works as a pastor.
I first learned to cook as a young girl from my southern grandmother. She was born and raised in North Carolina and taught me how to make biscuits and fudge from scratch, among other things. Since then I’ve enjoyed
eating making homemade meals and desserts for my family and friends. Due to some food sensitivities, my aim recently has been to revamp our recipes to make them healthier in general. We’re striving to replace processed foods with whole foods and incorporate healthier ingredients in recipes, such as coconut oil, honey, oat and nut flours, and so on. Many of the recipes I share come from successful experimenting in the kitchen, converting some of my old, favorite recipes to healthy, but still delicious, creations. Chocolate cake, anyone?
Interestingly enough, the idea to begin a blog was inspired by my Instagram account. It began as my creative outlet for photography and healthy eating and blossomed into something much more. I have enjoyed creating/photographing/sharing quick and healthy meals and snacks over the past several months. Never in my wildest dreams would I have thought anyone would ever try one of the recipes I shared, much less like them! I have been so encouraged by the feedback given by the Instagram community and hope that you are also able to find here some quick and delicious ways to eat healthy at home.
