Happy first day of fall, friends! This is one of my absolute favorite times of the year. Not only because the leaves begin to change to every beautiful shade of yellow and red or that the weather is cool enough to wear my boots and chunky sweaters again (yes!), but one of things I look forward to the most is that it’s pumpkin season again!
I LOVE all things pumpkin! I love it sweetened in pies, cookies, and muffins, and also savory in soups, stews, and roasted in the oven. Today I’d like to share some of the pumpkin-inspired recipes from this blog and from a few of my favorite food bloggers that are on my “to-make” list this fall! I hope you add some of these healthy and delicious recipes to your list too!
One of my favorite ways to enjoy pumpkin is for breakfast! The Glazed Pumpkin Crumb Muffins pictured above, (from yours truly;) is the recipe that kicked off this blog last year! They are still a family favorite and are wholesome enough for breakfast or a quick afternoon snack. They’re also gluten-free, vegan, and refined sugar free too!
Smoothies are one of our favorite things to enjoy in the morning, so why not drink a smoothie that tastes like pie! This Pumpkin Pie Smoothie from Skinny Ms. has all the delicious flavors of my favorite fall time treat, without the guilt!
Overnight oats are one of my go-to breakfasts for busy mornings. Try an autumn-inspired flavor with these Pumpkin Spice Overnight Oats from Rawmazing. These oats have chia seeds added for that extra source of protein, fiber, and omega 3’s. Use sprouted oats for an extra nutritional punch!
Who doesn’t love a healthy homemade granola?! This Pumpkin Oat & Quinoa Granola from Living Minnaly is full of wholesome ingredients, such as pumpkin and flax seeds, cacao nibs, and coconut oil. Makes the perfect topping for yogurt, smoothie bowls, or eaten plain as a snack!
I’m a big pancake fan and can’t wait to try these Gluten-Free Pumpkin Pancakes from Against All Grain! As if these pancakes being made with pumpkin isn’t enough, she also tops them with bacon and pecan crumbles! Oh.my.yum!
Although it may be hard to believe for some, pumpkin isn’t only delicious in sweet dishes. It’s also very yummy in soups, chilis, stews, and other hearty meals. Here are a few of the savory dishes on my fall menu:
This Thai Peanut Chicken and Pumpkin Curry w/Sticky Pomegranate Rice from Half Baked Harvest has my mouth watering! It’s like a gorgeous explosion of delicious flavors. I think pumpkin and curry are a match made in heaven and I’m excited to try this pomegranate rice! It’s almost too pretty to eat…almost. 😉
You can’t go through pumpkin season without making a pumpkin soup! This Pumpkin-Coconut Bisque from Popsugar combines two of my favorite flavors. It has minimal ingredients and takes less than an hour to make. The perfect quick meal to make throughout the work week.
These Pumpkin Barbecue Meatballs made by me are another delicious and hearty way to enjoy pumpkin! Juicy bites of turkey are covered with a tangy homemade barbecue sauce and baked in the oven. This barbecue sauce is also delicious on baked chicken. Try it for yourself!
This Pumpkin Chili from Julia’s Album is a vegetarian stew made with a mixture of beans, pumpkin, tomatoes, and a special blend of spices. I think a big pot of chili is the perfect comfort food on those cold, autumn days.
This Pumpkin Kale Lasagna from Foxes Love Lemons is packed with delicious ingredients, such as pumpkin puree, kale, couscous, chicken sausage, and a blend of spices and cheeses. Sounds like a delicious twist on an Italian classic!

These one bowl Vegan Pumpkin Cinnamon Rolls from Minimalist Baker are one of those “stop everything you’re doing and go make these NOW” desserts! I love a warm cinnamon roll fresh from the oven and these go one step further by adding pumpkin butter! I’m convinced that there is not much that can’t be made better with a little pumpkin butter slathered on top. Hashtag itssoooogood.
